Contemporary Thai restaurants typically appear when we think about prestige Thai cuisine. However, when thinking about a place to have authentic Thai food, there is one that comes to mind. Chef Noom Thaninthon, chef owner of Chim by Siam Wisdom, has distinct ideas about how he wants his food to be prepared, and they are unlike anything you've ever tasted. Let’s have a look in detail.

We'd like to point out that throughout our conversation with chef Noom, he spoke passionately about his experience. He began his career in the midst of criticism, but he persisted and eventually got one Michelin star for Chim by Siam Wisdom. He demonstrates how his unique cooking style propels him to the top. As a matter of fact, he is so enthusiastic that his speech might inspire everyone who hears it.

There are 2 options for dining at this restaurant: either à la carte or as a tasting menu course from the chef's menu. Let’s begin with ‘Tom Yum Plachon Bo-Larn’, a recipe from the King Rama II's era. The addition of raw rice in the soup to mask the smell of the fish is what distinguishes the dish from others, which effectively expresses Siam wisdom. Next dish, ‘Gai Golek’ which is Benja chicken (chicken that consumes brown rice) with Ko Rah sauce (a hotter version of satay sauce) and served on a banana leaf. As for the dessert, ‘Khanom Kho’ is a stunning dessert in both design and taste. There are two glutinous rice balls served with coconut milk and topped with black and white sesame. They also use Phetchaburi palm sugar which is an ideal dessert for Thai cuisine.

Chef Noom's creations at Chim by Siam Wisdom have received appreciation from both Thais and foreigners; they believe that he deserves a Michelin star. Despite all of his success, his passion never wavered. He keeps making Thai food with devotion and determination because he believes in its potential.
