Dej Kewkacha is the owner-chef of "Kyo Bar" and runs over 50 F&B outlets through his company, including "Kyo Roll En." He is a self-taught pastry chef and fluent in Japanese. "Kyo Bar" is a dessert bar located in Thailand that offers an ever-changing menu of desserts that are inspired by both Japanese and Thai ingredients and techniques. The concept of an "omakase" menu, where the chef selects the dishes for the customer, is a nod to traditional Kaiseki dining.

Kyobar is a unique dessert establishment that offers its patrons an omakase experience. In this format, the chef hand-picks and prepares a selection of dishes that showcase the freshest, seasonal ingredients available, be it sourced locally or imported from Japan. The menu will be in the form of a tasting menu, with each course being based on different colors, corresponding to the colors of the ingredients in each dish. The first course will be green, featuring green vegetables and sweets that resemble a salad. The second course will be pink, featuring ingredients that are all pink in color, such as pink salmon and pink grapefruit. The final course will be white, featuring white ingredients such as white turnips and coconut milk.
